ANSWERS TO YOUR MOST FREQUENT QUESTIONS

1. Are there any preservatives in Sugar?

A. No. The sugar you eat is pure sucrose and is a natural preservative in itself. There is nothing added in its preparation. Only water and molasses are removed from the raw sugar syrup extracted from the plant.

2. How many calories does sugar have?

A. 1 gram of sugar has 4 calories; one flat teaspoon of sugar has 16 calories. Compare this to fat or alcohol, which have around 9 calories per gram, and you can see why high carbohydrate (including sugar) diets are much better for you than high fat/low carbohydrate diets.

3. Does sugar make you fat?

 A. Contrary to popular belief sugar does not make you fat. In fact, as energy from sugars are not easily stored, they tend to be used quickly by the body. It is the energy from fats, which are easily stored but hard to convert, which end up on your stomach and hips as excess body fat.

4. Does sugar have any nutritional value beyond energy?

A. Yes. Sugar contains trace levels of important vitamins and minerals that your body needs.

5. Are chemicals used to bleach sugar to make it white?

A. No. The sugar that you eat is the same sugar that occurs naturally in the plants from which it is derived, just in a form more suitable for normal everyday use by people.

Sugar crystals are colourless in their natural state, so no bleaching is required. Molasses, which gives brown and raw sugar its colour, is separated from the white sugar granules with water and centrifugal force to provide the pure, white crystals you enjoy on your table. Nothing is applied to the sugar but more of nature itself.

6. How is brown sugar different from white sugar?

A. All sugar is essentially the same, except in two aspects: crystal size and the amount of molasses it contains. Molasses is the natural substance that adds both colour and sweetness to sugar and is what we remove from the raw sugar to make it white.

Brown sugar has a higher molasses content. The browner it is, the more molasses it contains.

7. What is the best way to store sugar once open?

A. Keep it in a sealed container away from sunlight. Sugar is a natural preservative and so does not degrade rapidly over time. The main factor in good storage is to control exposure to water or humidity.

8. How do I stop brown sugar from hardening over time?

A. Unlike white sugar, brown sugar hardens when the natural moisture levels evaporate. So it is important to make sure that brown sugar is stored in an airtight container to keep the moisture in.

9. How do I soften brown sugar that has hardened?

A. Once it has hardened, the best way to soften brown sugar is to place a piece of dampened bread or paper towel in the container with the amount of sugar you need, and place it in the microwave for 1 minute on a low setting until you see steam forming. Remove the container and let cool. Be careful not to open the container immediately as escaping steam can burn.

10. How do I soften white sugar that has hardened?

A. Unlike brown sugar, the best way to soften hardened white sugar is to break the block into small pieces using a meat tenderiser or mallet and then use a food blender to grind the pieces until smooth.
